do you have docs that explain more specifics?
is it end-to-end encrypted in transit?
for in rest, is it just the encryption we get from e.g. S3?

Yes, Delta Live Tables provides security both in transit and at rest.
For security in transit, all communication between the client and the Delta Live Tables service is encrypted using SSL/TLS encryption.
For security at rest, Delta Live Tables uses the same encryption that is provided by the cloud provider's storage service (e.g. S3 for AWS, ADLS Gen2 for Azure), and data is encrypted at rest by default.
Additionally, Delta Live Tables also supports data encryption using customer-managed keys (CMKs) for an extra layer of security. This allows you to have full control over the encryption keys used to encrypt your data.
