Yes, in fact the last two sprints I did POCs starting with Databricks' AI demos. First, who is your audience--business users, or other technology people? They'll be wowed by different things.
For my business users, the AI stuff offers a lot of razzle dazzle, but people need to realize you need to build A LOT of foundational stuff before you get there. The demos are good but did not install cleanly on my environment so I had to get into the underlying code and make some fixes, but all the better to learn from.
+1 for AI/BI Genie, this is self-serve BI (I market this internally as "talking to your own personal data analyst on your schedule"). My business users can't wait for us to finish the data foundation later this year. Another one I learned a lot from is the tools-enabled LLM. For technology audience, security demos are good, especially row/column level security (https://www.databricks.com/resources/demos/tours/governance-uc/row-and-column-level-security-with-un...) or data lineage/governance (https://www.databricks.com/resources/demos/tours/governance/unity-catalog-and-lineage)
Two notes on the demos: first, don't get suckered into the "free Databricks workspace" if you already have your own workspace, that's just the 14-day free trial. Second, pay attention to editing the config file for the demos so you can install them in the catalogs and schemas you want.
